Looking for new rear pads and discs for my X5, been looking on Eurocarparts, There is a choice of -
Pads -Textar, Pagid, Eicher and ATE
Discs -
Pagid and Textar
Can anyone recommend which ones I should go for?
Do I need a brake sensor for each side?

Textar/Pagid both OEM I think, and yes you need sensors. Have a look at the other thread running, if the sensor has gone off, could be the fronts not the backs.
The insides tend to wear much quicker and not possible to see without taking off the wheel.

Pagid are very good and I have run them a lot on previous cars. You will need to replace sensors too.

The computer is saying 'check brake linings'
Looking at both the front and rear pads I think its the rears, theres not alot left and the fronts seem good.
Is it best to change the rear discs too if i'm changing the pads?

The sensors are mounted in the pad edge itself. It sounds like it is most likely the rears but it has been known for the inside front pads to wear far more than the outside ones which look ok. Only need to change discs if they have a significant lip on the edge.

I genuinely believe, (but cannot confirm 100%), that pads/discs for E53 3.0i, 3.0d & 4.4i - closest/same to OE are as follows :
Front Pads Jurid 187
Rear Pads Textar T4001
Front Discs Brembo 09.8697.80
Rear Discs Brembo 08.7019.80
For Brembo discs try next day brakes dot com & for the pads as above try bmw parts online dot co dot uk
The 1st site sells Brembo pads which are cheaper than the Textar & Jurid pads. The 2nd site sells corrosion treated zimmerman's cheaper than the Brembo discs.
Be aware 4.6is & 4.8is have bigger pads/discs so order carefully.
I haven't used next day brakes dot com but have used bmwpartsonline - Danny seems to be a very good guy, very helpful & importantly supplied the right branded parts unlike some suppliers of parts for BMW's . You can email him re any queries on part suitability or quality - he was more than open with me when I bought a Z3 cam sensor recently. I would not hesitate to use him.......He can also source other parts if not in stock or on his site. I don't make recommendations for parts suppliers often or lightly. I should add I haven't used nextdaybrakes dot com but I haven't heard anything bad.
If in doubt re cable buy OE but I would trust bmwpartsonline not to sell rubbish & importantly to accept a return in event you weren't happy.
You will only need one cable sensor if its rears pads only as the car has 2 sensors which sit in a recess inside inboard rear offside & inboard front nearside.
By all means google email & call to your hearts content but I believe the sites I mentioned offer best current prices. I have just priced rear textar T4001 pads @ £40.20 inc vat & delivery from Danny at bmw parts online
I don't reckon you need discs but the brembo disc supplier I mentioned quote including vat & free delivery.
If you or others manage to find better prices for reputable suppliers then please share the info on these forums.
Cautionary advice - Don't mess with brakes unless confident you can replace same safely.........if in doubt use a good indy, supplying own parts if you desire & if agreed with them.

Just to add my current pads are pbr/axxis as imported- great for low brake dust, but noisy on mine when discs wet/cold & not as much cold bite as OE. I will be changing to Brembo discs & jurid/textar combo when I change my discs pads.
